Spandau Wolves – Meatballs with spinach and cheese in bacon

Ingredients for 2 servings:

  • 500 g minced meat, mixed
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 egg(s)
  • 3 tbsp, heaped breadcrumbs
  • 1 handful of cheese, grated
  • 1 handful of leaf spinach, finely chopped
  • Thyme
  • marjoram
  • salt and pepper
  • 10 strips of breakfast bacon
  • 2 tbsp Clarified butter or oil, for frying
  • 1 jar cranberries

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel and finely dice the onion and garlic. Knead the minced meat, egg, onion, garlic, and breadcrumbs. Knead in the cheese and spinach leaves and carefully season with thyme, marjoram, and salt and pepper, if desired. Don’t overseason; the bacon goes a long way! Form 10 meatballs by hand and wrap each one in a strip of bacon. Heat a little clarified butter or oil in a shallow pan over medium heat and fry the meatballs for about 8-10 minutes per side. Serve with cranberries and either fried potatoes or fresh mushrooms! Do not add ketchup or mustard; only cranberries.
