Ingredients for 3 servings:

  • 200 g flour
  • 1 tsp baking powder
  • 1 tbsp salt
  • 125 g margarine
  • 2 eggs
  • 1 red bell pepper(s)
  • 1 large onion(s)
  • 200 g mushrooms, brown
  • 1 can of corn
  • 150 g feta cheese
  • 1 clove(s) garlic
  • 1 cup of sweet cream
  • 100 g mozzarella, grated
  • 2 eggs
  • chili flakes
  • Thyme
  • rosemary
  • oregano
  • Paprika powder, sweet
  • Paprika powder, hot
  • salt and pepper
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

For the dough, mix the flour with baking powder and salt, then mix with the eggs and room-temperature margarine using a mixer. Let the dough cool in the refrigerator for 15 minutes. Meanwhile, preheat the oven to 180°C (top/bottom heat). In the meantime, prepare the filling. First, finely dice the onion, garlic, mushrooms and bell peppers and sauté them in a pan with a little olive oil. Add the corn and sauté this for a while. Season the vegetables with spices, salt and pepper. You can also add chili flakes for a spicy kick! Prepare the mixture in the pan and then spread the dough into a greased 24 cm springform pan or a small sheet pan. The base should be very thin, otherwise it will taste like dough later! Spread the vegetable mixture evenly over the dough. Then scatter the diced feta cheese on top. Finally, season the cream with the eggs, salt, pepper, and a few spices, then mix. Pour the mixture over the vegetable mixture in the dish, ensuring everything is covered! Top the quiche with the grated mozzarella and place it in the oven (middle rack) for about 30 minutes. The quiche is ready when the mozzarella has a light brown color.
