Ingredients for 4 servings:
- 400 g meatloaf or liver sausage
- 1 tbsp spice mix (gyro)
- 2 tbsp oil
- 500 g red bell pepper(s)
- 1 small vegetable onion(s)
- 200 g cucumber(s)
- 250 g low-fat curd cheese
- 250 g sour cream
- 1 garlic clove(s), if you like more, more, or garlic powder
- Salt and pepper, white
- 1 large flatbread(s)

Cut the meatloaf into strips. Mix the gyro seasoning, meatloaf, and 1 tablespoon of oil, let it sit for about 5 minutes (I sometimes let it sit in the fridge for half a day; it tastes more intense). Wash the cucumber, pat it dry, and coarsely grate it. Mix the quark and sour cream. Peel and finely chop the garlic and fold it into the quark. Season with salt and pepper. Clean, wash, and slice the bell pepper. Peel and dice the onion. Heat 1 tablespoon of oil in a pan. Brown the meat on all sides for about 2 minutes. Add the onion and bell pepper and cook for about 5 minutes. Season with salt and pepper. Quarter the flatbread, cut into pockets like a doner kebab, and toast both sides in the toaster. Place the tzatziki and meat gyro on the table so everyone can fill their pockets as they like. You can, of course, arrange them on plates with the meat and salad and serve the bread on the side.
