Ingredients for 2 servings:
- 2 chicken breast fillets
- salt and pepper
- 15 green olives, pitted
- 2 tbsp, heaped raisins
- 1 tbsp, heaped tomato paste
- 2 tbsp olive oil
- 1 tbsp, heaped basil, freshly chopped
- 2 tsp white wine vinegar

easy and quick to prepare
Wash the chicken breast, pat dry, cut a small slit in the thicker side, and open it up. Slice the olives and mix with the raisins, tomato paste, oil, basil, and vinegar. Cut a piece of aluminum foil to the size needed for each chicken fillet. Brush the aluminum foil with a little oil, season the chicken breast, and place it on the foil. Spread the tomato paste mixture over the chicken fillets, wrap them tightly in a package, and cook in a preheated oven or on a tabletop grill at 180°C for about 25 minutes. Then let it rest in the foil for about 5 minutes. Remove from the foil and serve with some salad and baguette or bread.
