Ingredients for 1 servings:

  • 240 ml water, lukewarm
  • 300 g wheat flour (type 550)
  • 100 g wheat flour (type 405)
  • ½ tsp salt
  • ½ cube of yeast
  • Flour for the bowl
  • Olive oil for the mold

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 5 hours 20 minutes

Combine both types of flour and the salt in a bowl. Dissolve the yeast in the water, add it to the flour, and knead everything into a smooth dough. Shape the dough into a ball, place it in the floured bowl, and let it rise in a warm place, tightly closed, for about 4 hours. Stretch the dough out and press it into the ciabatta pan greased with olive oil. Let it rise again for about 30 minutes. Then bake in a preheated oven (225°C) for about 30 minutes.
