Ingredients for 6 servings:
- 100 g onion(s), diced
- 3 stalks of thyme
- 225 g green olives, pitted
- 175 g brown cane sugar
- 120 ml vinegar (sherry)
- Salt
- pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Wash and dry the thyme stalks, and pick off the leaves. Combine all ingredients in a saucepan and simmer uncovered for about 20 minutes. Then puree with a hand blender until medium-fine. Season with salt and pepper, if desired. Allow to cool completely and serve on baguette.
