Ingredients for 1 servings:
- 100 g butter
- 2 eggs
- 140 g sugar
- 125 g flour
- 1 tsp baking powder
- 50 ml cream OR:
- 50 ml milk
- some salt
- 100 g butter
- 90 g sugar
- 3 tbsp flour
- 3 tbsp milk
- some salt
- 75 g almond(s), chopped or sliced
- Butter, for the mold
- Breadcrumbs, for sprinkling
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Swedish cake with caramel almond icing
Grease a springform pan with butter and then sprinkle with breadcrumbs to make it easier to remove the cake and to give it a nice crust. Preheat the oven to 175°C (top/bottom heat). Melt the butter and let it cool. Meanwhile, beat the sugar and eggs until fluffy. First add the butter, then the flour mixed with baking powder and the cream or milk. Mix everything well and pour into the greased pan. Bake the batter on the middle rack of the oven for 20-25 minutes. Meanwhile, prepare the glaze. Combine all ingredients in a saucepan and mix. Gently bring to a boil, stirring continuously, until golden brown and thickened. Remove the cake from the oven and spread the glaze over the cake. Return to the oven for about 15 minutes. Let the finished cake cool and then serve as desired.
