Mediterranean potato patties

Ingredients for 3 servings:

  • 500 g potatoes
  • 4 tomatoes, dried, in oil, drained
  • 10 olives, preserved in oil
  • 1 spring onion(s)
  • 1 sprig(s) of oregano
  • Thyme (a few branches)
  • 2 sprigs basil
  • 1 tbsp cream cheese (herb cream cheese with tomato)
  • 1 egg yolk
  • Salt
  • pepper
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes and boil them without salt, then press them through a potato ricer. Finely slice the spring onions, dice the tomatoes, thinly slice the olives, and finely chop the herbs. Mix all ingredients together well and season with salt and pepper. Shape the potato mixture into patties (size to your liking) and fry them in oil on both sides over moderate heat. Remove any excess fat from the patties with a paper towel. Serve hot.
