Ingredients for 6 servings:
- 200 g bulgur
- 3 tomatoes
- 1 bunch of spring onions
- 1 tsp sambal oelek
- 1 bunch of flat-leaf parsley
- ½ bunch mint
- 1 tbsp tomato paste
- 1 tsp, leveled cumin
- salt and pepper
- 3 tbsp olive oil
- ½ tsp paprika powder, hot (Piri Piri)
- 1 lemon(s), juice
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Boil the bulgur in 300 ml of water and let it swell for 30 minutes. Finely dice or chop the tomatoes, spring onions, and herbs and mix with the sambal oelek. Stir together a sauce of tomato paste, cumin, pepper, salt, olive oil, paprika, and lemon juice and pour it over the salad. Mix everything together and let it marinate well. Add fresh olive oil before serving, if desired. This dish goes well with lamb chops.
