Mediterranean tortellini salad

Ingredients for 4 servings:

  • 500g tortellini
  • 1 jar red pesto
  • 80 g Parmesan or Pecorino
  • 250 g cocktail tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic
  • some pepper, freshly ground
  • 70 g arugula

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

very tasty alternative to the standard tortellini salad

Cook the tortellini according to the package instructions. Meanwhile, halve the cherry tomatoes, grate the Parmesan or Pecorino cheese, and wash and sort the arugula. Mix the cheese with the crushed garlic, the pesto, and the olive oil. Season with pepper. Drain the cooked tortellini, place them in a bowl, and immediately toss with the pesto and cheese mixture. Add the halved tomatoes and stir well again. Let cool. Garnish with arugula. Tip: The salad tastes best after it has been left to marinate for 3-4 hours.
