Place a slice of cooked ham, about half a peach, and a slice of cheese inside each piece and fold it closed. Secure the meat with toothpicks or roulade pins to prevent it from falling out. Season with salt and pepper. Crack the eggs and coat the meat first in the egg, then in the breadcrumbs, and fry in clarified butter.
