healthy and fresh

The portion sizes vary, of course, depending on how much fits in your bowl. First, I dice the peaches and add them to the bowl with all the juice. Then I add the mandarins, which I cut into small pieces. I add the mandarins without the juice, though! From then on, the order doesn’t matter, but I cut all the fruit into small cubes. I never add all the seeds from a pomegranate to the salad, just about three-quarters of the fruit. After I’ve thoroughly mixed everything together, I put the salad in the fridge for at least an hour to marinate. The salad is very simple, of course, but it’s been a hit with our family for years.
