Melon with lemon syrup

Ingredients for 4 servings:

  • 1 kg watermelon(s)
  • 2 lemon(s), organic
  • 2 tbsp powdered sugar
  • 50 ml water
  • Peppermint, to taste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Zest the lemons with a zester and squeeze the juice from the lemons. Combine the juice, zest, and water in a small saucepan. Stir in the powdered sugar and simmer over low heat for about 25 minutes. Then let cool. Cut the watermelon flesh into bite-sized cubes. Cut the peppermint leaves into small strips. Mix the melon pieces with the syrup and peppermint. Serve best in a chilled bowl. It looks even prettier if you hollow out the melon and serve the melon pieces inside. It’s also delicious topped up with sparkling wine.
