Melted goat cheese on arugula with lukewarm orange jus

Ingredients for 2 servings:

  • 1 serving of arugula, ready to eat
  • 1 roll(s) of goat cheese, French
  • 10 slices of bacon
  • 1 bag of pine nuts
  • 300 ml orange juice
  • 2 tbsp honey
  • 1 tsp olive oil
  • 2 tbsp white wine vinegar
  • 1 pinch of salt
  • 1 pinch(s) pepper, mixed
  • 2 tsp cranberries from the jar or pear pieces

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

with bacon and pine nuts

Preheat the oven to 150 degrees Celsius and cut the goat cheese into slices about 0.5 cm thick. Fry the bacon in a pan until crispy and drain on kitchen paper. When the oven is hot, place the cheese slices on baking paper and place in the oven for about five minutes. Mix the dressing or jus from orange juice, honey, olive oil, vinegar, salt, and pepper. Then pour half of the jus over the washed salad in a bowl and let it sit. Heat the rest of the jus in the microwave until the honey has melted, then briefly toast the pine nuts in a grease-free pan until golden brown. Arrange the salad in a deep bowl with the fried bacon and cheese, then add the remaining jus and pine nuts. Garnish with a dollop of cranberries or pear pieces, if desired.
