Melted mozzarella tomatoes

Ingredients for 6 servings:

  • 1 kg tomatoes
  • 375 g mozzarella
  • 6 stalks of basil
  • Salt
  • pepper
  • garlic powder
  • 3 tbsp Balsamic vinegar, white
  • 2 tbsp olive oil
  • 1 small baguette(s), approx. 280 g
  • some olive oil

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

from the microwave

Rinse the tomatoes, pat dry, halve, remove the stem ends, and cut into cubes. Drain the mozzarella in a sieve and cut into large cubes. Rinse the basil and pat dry. Pluck the leaves from the stems and chop finely. Mix the diced tomatoes with the mozzarella cubes and basil, and season generously with salt, pepper, garlic, and vinegar. Place the ingredients in a microwave-safe dish and drizzle with olive oil. Place the dish in the microwave and cook with the cover on at 800 watts for about 6 minutes (at 600 watts for about 8 minutes). Then let it stand in the switched-off microwave for about 2 minutes. In the meantime, cut the baguette into thin slices. Heat olive oil in a pan. Fry the baguette slices on both sides and serve. Tip: Cook in the oven (top/bottom heat 180°C, fan 160°C) for 15-20 minutes.
