Mexican apple pie

Ingredients for 1 servings:

  • 200 g butter or margarine
  • 170 g sugar
  • 2 ½ tbsp vanilla sugar
  • 4 eggs
  • 170 g oat flakes (Kölln flakes, blossom-soft)
  • 60 g flour
  • 1 ½ tsp baking powder
  • 1 lemon(s), untreated, peel
  • 1 pinch of salt
  • 650 g apples
  • 1 lemon(s) (the juice)
  • 60 g butter
  • 100 g almond(s), chopped
  • 80 g sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the apples and fry them in the butter. Add the almonds, lemon juice, and sugar and simmer for about 10 minutes. Let cool. Cream the butter and sugar, add the eggs one at a time, and continue beating. Add the flour, oats, and baking powder to the butter mixture and mix well. Pour 2/3 of the batter into a springform pan lined with baking paper and smooth it out. Spread the cooled filling on top and pile up the remaining batter on top of the filling. Bake at about 160 degrees Celsius (convection oven), 180 degrees Celsius (top and bottom heat) for about 60 minutes. It stays fresh for a long time and tastes absolutely delicious. An apple pie with a difference.
