The perfect midnight soup >> recipe with a picture and simple step-by-step instructions.

  • 150 g Canned kidney beans
  • 200 g Lean beef
  • 2 Onions
  • 2 Garlic cloves
  • 2 tbsp Olive oil
  • Salt
  • 2 tbsp Soy sauce
  • 3 tbsp Tomato paste concentrated three times
  • 2 tsp Sweet paprika
  • 1 pinch Chili
  • 1 l Vegetable broth
  • 1 tsp Oregano
  • 4 tsp Crème fraîche with herbs
  1. Wash the meat, pat dry and dice. Clean and finely chop the onion and garlic. Heat the oil in a non-stick saucepan and sauté the onion and garlic until translucent. Add the meat and fry it.
  2. Add tomato paste and lightly toast. Then add the soy sauce, paprika and chilli. Deglaze with the stock and simmer over a moderate heat for about 35 minutes until the meat is soft.
  3. Rinse the beans in a colander and add to the soup. Let simmer for another 10 minutes. Season with oregano and salt to taste. Pour hot soup into cups and decorate with a dollop of crème fraîche with herbs.
