Mie Noodles with Peanut Sauce
The perfect mie noodles with peanut sauce recipe with a picture and simple step-by-step instructions.
- 150 g Mie noodles
- 4 tbsp Rapeseed oil
- 300 g Carrots
- 1 Cucumber
- 2 tbsp Peanut butter
- 3 tbsp Soy sauce
- Chilli from the mill
- 150 ml Vegetable broth
- 0,5 tsp Grated orange peel
- 1 tbsp Lemon juice
- 0,5 bunch Fresh coriander
- Prepare Mie noodles according to the package instructions and drain well. Heat 2 tablespoons of oil in a pan, fry the noodles in it over a medium heat for about 8 minutes.
- Peel the carrots, cut in half lengthways into thin strips. Peel the cucumber in strips, cut in half lengthways, core with a spoon. Cut the halves into thin slices. Remove the noodles from the pan. Fry the carrots in 2 tablespoons of oil in a pan for 3-4 minutes. Fry the cucumbers briefly.
- Mix in the peanut butter, soy sauce, chilli from the mill, orange peel and lemon juice and heat. Pluck the coriander leaves from the stems. Spread Mie noodles with peanut sauce on plates and serve sprinkled with coriander.
