Ingredients for 1 servings:

  • 250 g butter
  • 500 g flour
  • 250 g sugar
  • 6 medium-sized egg yolks
  • 1 pack of lemon peel
  • 1 medium egg yolk
  • 2 tsp cream
  • Flour , for the work surface

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 15 minutes

Great cookie dough for baking with children

Cream the butter with the sugar, lemon zest, and egg yolk until fluffy. Slowly add the flour and knead into a firm dough. Chill the dough for half an hour to an hour to make it less sticky. Roll out the dough on a floured surface and cut out shapes. Also, press the cutters into flour beforehand. I only take a portion of the dough at a time and move on to the next piece after rolling it out once. This way it doesn’t get too warm and sticky. Place the cookies on the baking sheet and brush with egg yolk or the egg yolk and whipped cream mixture. Then bake for about 30 minutes at 170 degrees Celsius (350 degrees Fahrenheit). Check regularly; the cookies should be golden yellow and not too dark.
