Ingredients for 4 servings:
- 200 g cheese (Handkäse, e.g. Harzerroller), young
- 200 g cheese (Limburger)
- 3 tbsp vinegar (apple cider vinegar)
- 3 tbsp Marsala
- 3 tbsp oil (I like to mix sunflower, olive, and walnut oil)
- Water
- 4 onions, possibly more
- salt and pepper
- Caraway seeds
- Paprika powder, hot
Instructions
Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes
Finely chop the onions and place them in a large glass bowl. Cut each slice of Handkäse in half, then cut the Limburger into 1 cm thick slices or pieces. Place the cheese on top of the onions. Pour the vinegar and oil over the cheese and fill with warm water until the cheese is covered. Season with pepper, paprika, salt, and caraway seeds. Stir everything gently again and then refrigerate. It’s ready to eat after 2-3 hours. We like to serve it with whole-grain bread. When we have guests, I always have a variety of breads available. If you like, you can also add butter.
