Millet Salad

The perfect millet salad recipe with a picture and simple step-by-step instructions.

  • 1 Cup Millet
  • 1,5 cups Vegetable broth hot
  • 4 Spring onions
  • 1 big bunch Fresh smooth parsley
  • 1 tube Tomato paste concentrated three times
  • 1 Tl Paprika powder (smoked)
  • Olive oil
  • Pepper
  • Romaine lettuce
  1. Bring the vegetable stock to the boil and dissolve the tomato paste in it. Bring to a boil.
  2. Rinse the millet in a fine sieve. Add to the tomato paste broth and bring to the boil again. Add smoked paprika powder to taste. Then turn off the stove and let it soak with the lid on with residual heat. Stir 1-2 times.
  3. Let the millet cool.
  4. Finely chop the spring onions and parsley in the lightning chopper and add to the cooled millet. Fold in a lot of olive oil (at least 75 ml).
  5. Place the romaine lettuce leaves on the plate. Prick the millet salad with a spoon and place on the lettuce leaves.
