Ingredients for 4 servings:
- 1 roll
- Water for soaking
- 1 onion(s)
- 2 garlic cloves
- 1 bunch of thyme
- 500 g minced meat, mixed
- 1 egg(s)
- Salt and pepper, black
- Allspice, ground
- cumin
- 100 g sheep’s cheese
- 2 tbsp olive oil
- 50 g green olives, pitted
- 50 g olives, black, pitted
- 2 tomatoes, dried
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour
Soak the bread roll in cold water for about 10 minutes. Peel and dice the onion. Peel the garlic, chop one clove, and finely slice one. Strip the thyme leaves. Squeeze the dough out of the bread roll, knead it with the diced onion, chopped garlic, half the thyme, the minced meat, and the egg. Season to taste. Form eight meatballs. Cut the cheese into strips, place on top, and roll the meatballs into rolls. Fry in hot oil for about 7 minutes. Dice the tomatoes. Add to the rolls along with the olives, garlic leaves, and remaining thyme. Heat through.
