Minced meat roll with wild garlic and feta filling

Ingredients for 6 servings:

  • 1 kg minced meat, mixed
  • 2 eggs
  • 100 g breadcrumbs
  • 1 garlic clove(s)
  • salt and pepper
  • Paprika powder
  • 1 bunch of wild garlic
  • 6 slice(s) ham, raw
  • 8 tomatoes, dried
  • 150 g feta cheese

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Knead the minced meat with the eggs, spices, crushed garlic clove, and breadcrumbs. Spread out a piece of aluminum foil and roll the minced meat out into a flat, rectangular shape. Place the ham on top of the meat. Lightly chop the sun-dried tomatoes and roughly chop the wild garlic. Place both on top of the rolled-out meat. Slice the feta cheese and place it on top. Now, using the aluminum foil, roll the meat dough up from the long side to form a large, long minced meat roll. Place the roll in a large baking dish or on a baking sheet. Make sure the roll lies on the “seam” so it doesn’t open, and seal the sides tightly with the meat (i.e., press them together) to prevent the filling from leaking out. Cover the roll with aluminum foil and bake in the oven at 200°C for about 60 minutes. Then remove the aluminum foil to brown the minced meat roll, then bake for another 30 minutes. We had new potatoes, asparagus and hollandaise sauce with it, although you can combine it with anything you like.
