Ingredients for 4 servings:
- 2 onions
- 1 clove(s) garlic
- 1 red chili pepper(s)
- 250 g minced meat
- 2 tbsp oil
- 1 tbsp tomato puree
- 125 ml vegetable stock
- 1 small can of corn
- 1 can kidney beans
- ½ bunch parsley, chopped
- Salt
- Cayenne pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely chop the onions and garlic. Deseed and finely chop the chili. Fry everything with the crumbled mince in hot oil. Add the tomato puree and broth, and season with salt and cayenne pepper. Cover and simmer gently for 5 minutes. Rinse the corn and beans in cold water, add them, and heat through. Adjust seasoning if desired. Sprinkle with chopped parsley. Serves with pasta.
