Minced meat stew with mushrooms

Ingredients for 4 servings:

  • 500 g minced meat, mixed or beef
  • 2 leeks or 3 onions, cut into rings
  • 250 g carrot(s), cut into slices or sticks
  • 6 tomatoes, fresh or 1 smallcan pizza tomatoes
  • 150 g mushrooms, cleaned and sliced
  • 1 garlic clove(s), pressed
  • 1 tbsp tomato paste
  • 2 tsp, heaped vegetable stock, granulated
  • olive oil
  • salt and pepper
  • e.g. soy sauce
  • 3 potatoes, peeled, diced (optional)

Working time approx. 30 minutes; Total time approx. 30 minutes

In a large pot, lightly fry the leeks or onions in olive oil, add the minced meat, and fry. Add the carrots, garlic, potatoes, and mushrooms and fry briefly. Add the tomato paste and fry briefly. Peel and chop the fresh tomatoes, and add them to the pot. Alternatively, add the pizza tomatoes. Pour in enough water to cover everything. Stir in the vegetable stock, bring to a boil, and season with salt, pepper, and soy sauce, if desired. Simmer for 25-30 minutes. Serve with baguette.
