Ingredients for 4 servings:
- 300 g pasta (spirals)
- ½ stalk(s) leek, finely chopped
- 500 g minced meat, mixed
- 2 carrots, diced
- 1 small zucchini, diced
- 150 g mushrooms, sliced
- 2 tbsp tomato paste
- 1 small can of tomatoes, chopped
- 150 ml vegetable stock
- 1 clove(s) garlic, finely chopped
- 1 tbsp curry powder
- 1 tbsp oregano, dried
- 1 tbsp, levelled sugar
- some chili powder
- salt and pepper
- 2 tbsp crème fraîche
- some oil for frying
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
in spicy tomato curry sauce
Cook the pasta in salted water according to the package instructions until al dente, then drain well in a colander. Briefly sauté the sliced leek in a pan with a little oil. Then add the minced meat and fry until crumbly. Next, add the carrots, zucchini, mushrooms, and tomato paste and fry briefly. Pour in the vegetable stock and chopped tomatoes and mix everything well. Season to taste with garlic, curry powder, oregano, sugar, chili powder, salt, and pepper. Then simmer gently for about 10 minutes. The vegetables should still be firm to the bite! Finally, stir in the crème fraîche. Add the cooked pasta, mix everything well, and serve immediately.
