Minced Meatball Noodle Soup with Potato Pancakes

The perfect minced meatball noodle soup with potato pancakes recipe with a picture and simple step-by-step instructions.

For the soup I need

  • 2 Tablespoon Vegetable broth (homemade paste) https://www./rezept/534170
  • 1 Pcs. Noodle nests
  • 1 Pcs. Onion
  • 1 Pcs. Garlic clove

For the minced meat I need

  • 150 g Mixed hack
  • 0,5 Pcs. Diced onion
  • 2 good teas. Mustard with a spicy sweetness (Bautzener)
  • 1 whole Egg (free range)
  • 1 Soaked disc Toasted bread (whole grain)

Spices for it

  • 1 Teaspoon. Rubbed marjoram
  • 1 Teaspoon. Salt pepper a.d.M.
  • Parsley fresh or frozen
  • 3 size Floury potatoes

For the potato pancakes is needed

  • 1 whole Free range egg
  • 1 small Diced onion
  • 1 small Marjoram
  • 1 small Salt, pepper a.d. M.
  • 1 Tablespoon Double-Grip flour (by feel)
  • 1 Tablespoon Grated fresh ginger
  • Frying fat or oil

The soup

  1. Make your own vegetable paste, dissolve in the water and bring to the boil. Mash the noodle nest by hand and add it to the broth. Now serve the minced meat. I soaked the toast briefly in water, expressed well and worked it into the meat mixture, as did the egg and the other ingredients.
  2. Now I turn off small dumplings and add them to the boiling broth, let them steep for a good 20 minutes. I also add the chopped onion and the clove of garlic to the soup.

The potato pancakes

  1. Peel the potatoes, grate them a little coarser, rub in the ginger with salt, rub in the egg and marjoram, and sprinkle some flour over them, it binds better. Let the fat get hot in the pan and then it’s ready to go. The thinner you put in the pan, the more crispy it will be. It would also be recommended to add one or two Zewa towels because of the fat.
