Mini omelet from the microwave

Ingredients for 1 servings:

  • 2 eggs
  • 4 slices of raw ham
  • e.g. pepper(s), diced
  • n. B. spring onion(s)
  • e.g. tomato(s)
  • e.g. salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 8 minutes

3-minute low-carb breakfast

Place two slices of raw ham crosswise in a muffin tin (I use silicone ones for this). Add an egg to each slice, along with diced bell peppers, tomatoes, or other vegetables, spring onions, etc., as desired. Season with a little salt (ham is salty!), pepper, and herbs if desired. Microwave for 3 minutes at 700 watts, until the egg is still creamy in the center. Nutritional information according to fddb: Energy 1074 kJ (257 kcal) Fat 14.7 g Carbohydrates 1.4 g of which sugars 0.6 g Protein 30.1 g Cholesterol 459 mg Bread units (BU) 0.1 kcal 257 per serving. These muffins are perfect for a low-carb breakfast and are very versatile—if you don’t want to worry about the fat content, you can of course replace the raw ham with bacon and add some cheese. They’re also delicious with tomato chunks and feta. I think they taste great even in a slimmed-down version, and most importantly, they’re super quick to make.
