Mini pizza in muffin format

Ingredients for 1 servings:

  • ½ small bell pepper(s), finely diced
  • 1 small onion(s), finely diced
  • 200 g cheese (e.g. Gouda), grated or vegan cheese
  • 1 pack of pizza dough from the refrigerated section
  • 5 tbsp tomatoes from the can or strained or 1/2 jar pizza sauce
  • 2 tbsp tomato paste
  • 1 tsp pizza seasoning or oregano
  • ½ tsp salt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Makes about 12 pieces.

Preheat the oven to 180°C. Place the diced vegetables in a bowl, then add the tomatoes or pizza sauce (usually included with the pizza dough), tomato paste, and seasonings, and mix well. Cut the pizza dough into pieces—either to fit the muffin tin or as desired (I used 15 pieces; I made flat, square mini pizzas with the remaining 3 pieces of dough) and press them into the muffin tin. The corners will stick out slightly; if you don’t want them to stick out, you can cut them out. Spread the filling on the pizzas and top with cheese. Then bake in the preheated oven for about 20 minutes. Perfect as a cold snack to go, as a complete meal, or as a party snack.
