Mini quiches with goat's cheese and spring onions

Ingredients for 8 servings:

  • 1 roll(s) of quiche and tart dough, from the refrigerator, not frozen, 300 g each
  • 2 spring onions
  • 200 g goat’s cheese
  • 2 eggs
  • 100 ml cream
  • chili salt
  • pepper
  • nutmeg

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Cut 8 round shapes from the dough, the size of the muffin cups, and place them in each of the holes, lining the edges. Slice the spring onions into very small rings and arrange them in the holes. Cut the cheese into 8 pieces and place them on top. Whisk the eggs with the cream and season with spices. Pour into the tins and bake the mini quiches in the oven at 180°C for about 30 minutes. These mini quiches with goat’s cheese and spring onions make a wonderful snack between meals or as an appetizer with an aperitif.
