Mint – Lemon – Vinegar

Ingredients for 1 servings:

  • 2 tbsp peppermint, fresh
  • 2 tbsp lemon balm, fresh
  • ½ lemon(s), untreated
  • 500 ml vinegar (fruit vinegar)

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Thinly peel the lemon zest with a vegetable peeler. Finely chop the herbs. Pour the vinegar into a saucepan and bring to a boil. Place the herbs and lemon zest in a bowl. Pour the hot vinegar over the lemon zest. Let it steep for at least 24 hours. Strain the vinegar through a filter bag into a sterile bottle.
