  • 1,000 g mirabelle plums
  • 2 bags of vanilla sugar
  • 1 lemon(s), the juice
  • 500 g gelling sugar, 2:1

Wash and pit the mirabelle plums, combine them with the sugar and lemon juice in a large saucepan, and heat while stirring until the sugar dissolves. Remove from the heat and blend until smooth. Strain the mixture through a fine sieve, return it to the pan, and simmer for 4 minutes, stirring constantly. Immediately transfer to prepared jars and seal.
