Mirabelle jam with apple

Ingredients for 1 servings:

  • 700 g mirabelle plums
  • 200 ml apple juice, naturally cloudy unsweetened
  • 500 g sugar
  • 1 lemon(s)

Pit 600 to 700 grams of fresh mirabelle plums and boil them in a little water until soft. Then whizz them through a food mill until a smooth purée forms. You should make 500 grams in total. Bring the mirabelle plum purée to a boil with apple juice, sugar, and the juice of half a lemon to one lemon, stirring constantly, and cook until the mixture sets (test occasionally). I now make all my jams with real sugar, which is a little sweeter, but I think it’s worth the effort because the jam is then guaranteed to be free of artificial additives and will keep forever without unsightly discoloration. This quantity makes about 4 small 200g jars.
