Ingredients for 1 servings:

  • 560 g mirabelle plums, weighed without stones
  • 1 tbsp lemon juice
  • 75 ml water
  • 75 ml sparkling wine, dry
  • 170 g gelling sugar 3:1

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Chop the mirabelle plums into small pieces and place them in a saucepan with the lemon juice, water, and sparkling wine. Simmer for about 15 minutes. Roughly chop with a hand blender. We like the jam to retain some fruit pieces. Then add the sugar and let it cook for 3-4 minutes. Pour into prepared jars, seal, and turn the jars upside down for 5 minutes. Makes about 3-4 jars, depending on the jar size. The most time-consuming part of the preparation is preparing the mirabelle plums (cleaning and pitting). If you subtract this time, it goes very quickly.
