Ingredients for 1 servings:

  • 4 kg mirabelle plums
  • 300 ml water
  • 4 packs of gelling sugar (2:1)
  • 500 g sugar
  • 1 pack of citric acid
  • 20 ml rose water
  • 1 pack of vanilla extract

Working time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 40 minutes

Jam from wild mirabelle plums

Wash the mirabelle plums. Then heat them with the water in a saucepan. The mirabelle plums can now be easily pitted (it’s best to work with fine rubber gloves). Pit approximately 4 kg of fresh mirabelle plums. Weigh out 3.5 kg and place them in a large saucepan. Add the sugar, vanilla extract, rose water, and citric acid and simmer gently for about 30 minutes. Then add the gelling sugar. Bring to a boil briefly and simmer for about 10 minutes, stirring constantly! After the cooking time, pour the mixture into prepared jars. If there are still stones in the mixture, they can be easily removed during filling. Seal the jars immediately and turn them upside down for about 15 minutes.
