Ingredients for 1 servings:

  • 1 lemon(s), untreated
  • 250 g butter, room temperature
  • 150 g sugar
  • 300 g flour
  • 100 g cornstarch

Wash the lemon, zest, and then juice the lemon. Beat the butter, sugar, and lemon zest for about 10 minutes until fluffy. Add the flour, cornstarch, and lemon juice. Briefly knead all ingredients. Let the dough rest in the refrigerator for about 30 minutes. With lightly floured hands, form hazelnut-sized balls and place them on a baking sheet lined with baking paper. Make sure there is enough space between the individual balls, as the dough will spread a little. Bake in a preheated oven at 170 degrees Celsius for about 30 minutes. The cookies should be golden brown. You may need to bake them in several batches if they don’t all fit on one baking sheet.
