Ingredients for 5 servings:
- 700 g fish fillet(s) (matjes), fresh
- 250 ml milk
- 1 large apple
- 1 large onion(s)
- 1 large carrot(s)
- 100 g cucumber(s)
- 100 g gherkins
- 200 g sour cream
- 200 g cream
- 5 tbsp mayonnaise
- 50 ml milk
- 4 tbsp natural yogurt
- 2 tbsp crème fraîche
- 2 tbsp vinegar (white wine vinegar)
- 2 tsp sugar
- pepper
- Salt
- e.g. Dill, chopped
Instructions
Working time approx. 40 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 40 minutes
Creamed herring with dill
Let the fresh herring fillets soak in 250 ml of milk for 60 minutes. Meanwhile, peel the apple, onion, and cucumber and chop them together with the gherkin. Peel and finely grate the carrot. Briefly blanch the grated carrot and onion in boiling water (max. 1 minute). Remove the herring fillets from the milk and place them in a large ceramic bowl. Add the sour cream, cream, mayonnaise, 50 ml of milk, the natural yogurt, the crème fraîche, the white wine vinegar, and the sugar. Stir everything well. Now add the vegetables and stir again. Season with pepper and salt. Then add the dill. The herring fillets need to soak for at least 5 hours before serving. The dish will keep in the refrigerator for at least 3 days.
