Ingredients for 1 servings:
- 100 g butter, soft
- 175 g sugar
- 2 eggs
- 1 tsp vanilla, pure
- 1 pinch of salt
- 250 g flour
- 2 tsp baking powder
- 150 g buttermilk
- 1 orange(s), untreated, zest
- 250 g cranberries
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Mix all ingredients except the cranberries thoroughly with a mixer. Then fold in the cranberries. Bake in a muffin tin (with or without paper baking cups) in a preheated oven at 170°C (160°C fan-assisted oven) for about 35 minutes. Any other fruit, such as blueberries, can be used, but the cranberries give the muffins a wonderful, slightly tart flavor.
