Mixed cucumber salad

Ingredients for 6 servings:

  • 2 large cucumbers
  • 3 bell peppers, red and yellow
  • 2 large onions, red
  • 2 packs of organic feta cheese
  • 4 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1 cup sour cream
  • herb salt and pepper
  • e.g. chives, parsley and dill
  • 2 handfuls of walnuts
  • e.g. lemon juice
  • n. B. sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash, peel, and thinly slice the cucumbers. Wash and slice the bell peppers, slice the onions into thin rings, and mix everything in a bowl. Dice the feta cheese and add it. Roughly chop the walnuts, toast them briefly in a pan, and add them to the bowl while still warm. For the salad dressing, chop the chives, parsley, and dill, add the olive oil and balsamic vinegar, stir in the sour cream, and season the dressing with salt and pepper. Mix in a shaker until creamy. If you like, add a squeeze of lemon juice or a spoonful of sugar. Pour the dressing into the bowl and mix everything gently.
