Mixed Oatmeal Bread

Ingredients
 

  • 30 g Fresh yeast
  • 560 ml Lukewarm water
  • 1 tbsp Raw cane sugar
  • 450 g Wheat flour
  • 300 g Rye flour
  • 80 g Oatmeal
  • 20 g Salt
  • 1 tbsp Oatmeal

Instructions
 

  • Dissolve the yeast together with the sugar in the lukewarm water. In a wide bowl, mix the two flours with the salt and the oat flakes well, make a well in the middle and add the yeast water there.
  • Now knead everything well by hand until the dough comes off the bowl by itself and is smooth and pliable. Cover with a linen cloth and let rest in a warm place for 90 minutes.
  • Line a loaf pan with baking paper. This works really well if you crumple up the baking paper, soak it well under cold running water and then wring it out really well. Then the baking paper fits really well into the shape.
  • Now knead the dough really well again, put it in the loaf pan and distribute the dough well. Sprinkle a tablespoon of oat flakes on top, press down a little and cover again and leave to rest in a warm place.
  • Then put the bread in the oven preheated to 190 degrees and bake for about 50 minutes - and always remember to add boiling water to the oven. The bread is good when it sounds hollow when you knock on the bread.
  • Then take the bread out of the oven, first let it cool down in the tin for 15 minutes and then let it cool down completely on a wire rack.
