Modern Bruschetta

Ingredients for 4 servings:

  • 1 large zucchini
  • 1 ball of mozzarella
  • 4 large tomatoes
  • 2 cloves garlic
  • 5 tbsp olive oil
  • 2 large onions
  • 2 tbsp parsley, chopped
  • 2 tbsp chives
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tsp curry powder
  • 5 large mushrooms
  • 8 slices of bread

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 35 minutes

Cut the zucchini, tomatoes, onions, mushrooms, and mozzarella into small cubes and place them in a sealed bowl (or use cling film to cover). Put all the spices, including the chives and parsley (both finely chopped), into a separate bowl and mix with the olive oil. Crush the garlic cloves and stir again. Add the mixed marinade to the vegetables. Mix everything well and cover with the lid/cling film. Let it sit in the refrigerator for at least 1 hour. The longer it stays in the refrigerator, the better the flavor develops. Slice the bread (choose the bread according to your taste—I always use flatbread), drizzle with oil, and season with salt and pepper. Then brown it in a pan or on the grill to taste. Now simply spread the chilled topping on the bread, and your “modern bruschetta” is ready.
