Moist banana chocolate muffins with Licor43

Ingredients for 1 servings:

  • 300 g flour
  • 125 g butter, soft
  • 100 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 3 bananas
  • 100 g chocolate chips
  • 100 g chocolate shavings
  • 75 ml liqueur (Licor43)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

for a 12-cup muffin tray

Using a hand mixer, cream the softened butter until creamy. Stir in the sugar and vanilla sugar until the mixture forms a thickened batter. Then beat in each egg on high for at least 1/2 minute. Vigorously stir in the chopped bananas and add the Licor43. Mix the flour with the baking powder and stir in. Finally, add the chocolate and mix. Line a 12-cup muffin tin with paper cases and spread the batter evenly. Bake in an oven preheated to 180°C (convection oven) on the middle rack for about 25 minutes. Do the toothpick test.
