Moist nut and date cake

Ingredients for 1 servings:

  • 200 g butter
  • 100 g wholemeal flour
  • 300 g nuts
  • 150 g dates
  • 125 ml milk
  • 4 m.-sized eggs
  • 1 pinch of salt
  • 1 pinch of cinnamon
  • 1 packet of baking powder
  • ½ cup date syrup or maple syrup
  • ½ cup of tea (chai tea)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

without sugar (Thermomix)

With Thermomix: Place the nuts and dates in the mixing bowl and chop for 5 seconds/speed 7. Add the remaining ingredients, except for the syrup and tea, and knead for 1.5 minutes/reverse/speed 5. Without Thermomix: Beat the butter until soft, then stir in the flour, ground nuts, and the remaining ingredients, except for the dates, syrup, and tea. Finely chop the dates and fold them in. Pour the batter into a greased cake tin and bake for 50 minutes at 180 degrees Celsius. Cover with aluminum foil if necessary. After baking, mix half a cup of syrup with hot chai tea and drizzle the liquid over the cake. Let cool.
