Ingredients for 4 servings:
- 2 bananas, ripe
- 4 eggs
- 4 tbsp tiger nut flour
- 100 ml coconut milk
- 1 tsp, smothered cinnamon
- 3 tbsp coconut oil

Paleo
Mash the bananas with a fork or potato masher until smooth and then combine with the other ingredients, except for the oil, using a hand mixer to form a smooth batter. Heat the coconut oil in a nonstick pan and cook small pancakes over low heat. Tip: Cover the pan before turning the egg for the first time so the egg sets faster and the pancakes are easier to flip. The specified amount for 4 people yields approximately 25 small pancakes. Serve with fresh fruit.
