Mom's leftover pan

Ingredients for 3 servings:

  • 1 small onion(s)
  • 1 pack of buttered vegetables, frozen
  • 4 frankfurters
  • 4 large eggs
  • Noodles or spaetzle, cooked leftovers
  • some milk
  • salt and pepper
  • Paprika powder
  • possibly parsley
  • chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

My mother often made this pan when I was a child.

Dice the frankfurters and onion. Fry the frankfurters or wieners. I’ve also done this with pork sausage or leftover cold cuts. Add the onion and buttered vegetables and fry for 10 minutes. Add the cooked pasta from the day before and fry vigorously for about 10 minutes, stirring frequently and seasoning to taste. The herb butter from the frozen vegetables gives it a very salty flavor. Shortly before the end of the cooking time, whisk the eggs with the milk and pour over the pasta. Let it set for about 5-8 minutes, or stir thoroughly, as desired. Transfer to a plate and serve sprinkled with parsley or chives. Ketchup is delicious with it.
