Ingredients for 3 servings:

  • 1 kg potatoes, waxy
  • ½ onion(s)
  • 250 ml mayonnaise
  • 100 ml water
  • ½ jar cucumber juice
  • 3 eggs
  • 5 gherkins
  • 1 tbsp beef broth, instant
  • pepper

Potato salad with mayonnaise

Peel the potatoes and cook in boiling water or in the microwave for about 20 minutes. Allow the potatoes to cool, then slice and place in a large bowl. Meanwhile, boil the eggs (boil them until really hard-boiled). Peel the eggs and chop them together with the onion and gherkins. Add them to the bowl with the potato slices. Bring 100 ml of water to a boil and stir in 1 tablespoon of beef stock. Then add the stock to the bowl. Add the mayonnaise and gherkin juice and mix well. Season to taste with pepper. Season again with salt, beef stock, or pepper, if desired, and serve while still warm.
