Mon Cheri – Muffins

Ingredients for 1 servings:

  • 175 g butter or margarine
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 150 g sugar
  • 5 tbsp lemon juice
  • 4 eggs
  • 330 g flour
  • 1 packet of baking powder
  • 150 g sour cream
  • 12 pieces of confectionery (Mon Cheri)
  • 250 g powdered sugar
  • n. B. Food coloring and sugar writing, red
  • n. B. cherry(s) (cocktail cherries)
  • Sugar granules
  • Paper cups

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the butter, salt, vanilla sugar, sugar, and 2 tablespoons of lemon juice in a mixing bowl and beat until frothy using the whisk attachment of a hand mixer. Gradually beat in the eggs. Mix the flour and baking powder and beat in alternately with the sour cream. Place two paper baking cups into each of the holes in a 12-hole muffin tin. Fill the cups evenly halfway with batter. Place a Mon-Chéri in each and cover with the remaining batter. Bake in a preheated oven (top/bottom heat: 200°C, fan: 175°C, gas mark 3) for about 25 minutes. Remove from the oven and let cool on a wire rack. Mix the icing sugar and the remaining lemon juice until smooth and tint it light pink with a few drops of food coloring. Spread the mixture evenly over the muffins. Decorate with red icing, sugar sprinkles, and cocktail cherries.
