Ingredients for 4 servings:

  • 2 onions
  • 2 cloves garlic
  • 1 stalk(s) leek
  • 50 g bacon (streaky smoked bacon)
  • 200 g farmer’s bread, dark, sliced
  • 50 g lard
  • 1 tsp marjoram, shredded, caraway and lovage (one tsp each)
  • ½ tsp pepper, coarse black
  • 1 liter meat broth
  • 125 g cheese (Emmental), diced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Fry the bacon in a pan, add the lard, and heat. Add the onions, leeks, and garlic and sauté for 5 minutes until golden brown. Add the bread cubes and toast, then sprinkle with seasoning. Pour in the meat broth and bring to a boil. Add the cheese cubes and sprinkle with marjoram, parsley, or chives.
