Moni’s Strawberry Cake

The perfect moni’s strawberry cake recipe with a picture and simple step-by-step instructions.

  • 80 g Soft butter
  • 80 g Sugar
  • 2 Pc. Free range eggs
  • 1 Pr Sea salt fine
  • 1 tbsp Bourbon vanilla sugar
  • 1 tbsp Rum
  • 200 g Flour
  • 1,5 tsp Baking powder
  • 5 ml Milk
  • 500 g Fresh strawberries
  • Sugar fine
  • 1 packet White cake topping
  1. First, clean the strawberries and cut them in half, wash them in quarters that are too large, drain them briefly and put them in a bowl, sprinkle with sugar and set aside.
  2. Beat the butter until foamy, add the sugar spoon by spoon and the eggs little by little and stir to a very fine foamy. Add the salt, vanilla sugar and rum and keep stirring until the sugar has dissolved. Mix the flour with baking powder, if necessary, sieve and alternately stir in with milk until a smooth medium-firm dough is formed, the dough should fall off the spoon with difficulty.
  3. Grease the fruit tart tin with a little butter and distribute the batter evenly on it. Place the baking pan on the middle rack in the oven preheated to 200 ° C and bake for approx. 25-30 minutes. As a precaution, make a cooking test with the roulade needle after approx. 20 minutes.
  4. Take the cake base out of the oven and let it cool down, then turn it out on a dead cake plate after it has cooled down.
  5. Put the strawberries in a kitchen sieve and let them drain, catching the juice. Evenly distribute the drained earthquakes on the cake base, as little of the cake base as possible should of course be seen except for the edge.
  6. Put as much of the collected juice in a saucepan as indicated on the cake icing package and prepare the cake icing according to the instructions on the package.
  7. Distribute the finished cake evenly over the strawberries so that everything is covered by the strawberries. Cool the pouring down and let it set. Cut the strawberry cake into 12 equal pieces, arrange on cake plates and serve with fresh cream. Unfortunately we had to prepare 2 pieces.
