Ingredients for 12 servings:
- 115 g butter
- 170 g sugar
- 2 eggs
- 230 g banana(s), mashed
- 60 ml Baileys Irish Cream
- 2 tsp baking powder
- 220 g flour
- 1 pinch of salt

Working time approx. 15 minutes; Total time approx. 15 minutes
Banana sponge cake
Cream the butter and sugar until fluffy and blend. Add the eggs one at a time and mix well. Stir the mashed bananas into the mixture and stir in the Baileys. Mix the flour, baking powder, and salt and fold into the batter. Bake in a greased springform pan in a preheated oven at 180°C (350°F) for about 50 minutes (test with a toothpick). Cover with icing.
